Quick Greek Bean Soup

This is the most delicious and nutritious soup. It is very quick to prepare and your house will smell amazing.

Chop 1 onion, 3 carrots and 3 stalks of celery. Sautee veggies with 1 T of tomato paste and salt and pepper for 20 minutes.

Add 2 cans of white beans (drained and rinsed), 1 large carton of chicken or vegetable broth plus 1 can of broth. Simmer 30 minutes.

Throw in 1 big handful of chopped fresh spinach, 1 T of tomato paste and some more salt and pepper. Cook a few minutes and puree with an immersion blender.

Serve with warm, crusty bread.
